Thats right a Bacon-Jalapeño-Tomato sandwich.

Ok not ground breaking, but one of the best sandwiches I have ever made.  A little home-made garlic aioli (fancy name for Mayo made with olive oil) on toasted bread.  Garden fresh tomatoes and jalapeños (not from my garden of course).  Put it all together and man sheer extasey, well maybe not THAT good but close.

Homemade Mayo is super easy and tastes alot better.  Sure there is a chance of getting food poisioning.  1 in 20000 are odds I am ok with.
2 egg yolks
1 tsp of Dijon mustard
juice from 1 lemon
1 1/2 cup oil (olive if you want aioli)

I am “camping” so the facts may be different but this is how I remember it.
